合掌瓜腰果紅腰豆素湯

材料:

合掌瓜 1斤
粟米 2條
腰果 2両
紅腰豆 2両
花生 2両
無花果 3個
陳皮 半個

Ingredients:

600g chayote
2 corns on cob
75g cashew nuts
75g red kidney beans
75 peanuts
3 dried figs
1/2 dried tangerine peel

做法:

1. 陳皮用水浸軟,刮淨內瓤。
2. 紅腰豆及花生洗淨,用水浸1小時,隔去水分。

3. 合掌瓜去皮、去核,洗淨,切大塊。
4. 粟米撕去外衣,洗淨,切段。
5. 腰果及無花果洗淨。
6. 煲內注入清水12杯,加入陳皮、紅腰豆及花生煲滾,下合掌瓜、粟米、腰果及無花果煲滾,轉小火煲1 1/2小時,下少許鹽調味即成。

Method :

1. Soak dried tangerine peel until soft. Scrape off the pith.
2. Rinse kidney beans and peanuts. Soak for 1 hour and drain.
3. Peel chayote and remove seeds. Rinse and cut into large pieces.

4. Tear off the husks from corns on cob. Rinse and cut into sections.
5. Rinse cashew nuts and dried figs.
6. Pour 12 cups of water in a pot. Put in dried tangerine peel,kidney beans and peanuts. Bring to boil. Put in chayote, corns,cashew nuts and dried figs. Bring to boil. Turn to low heat and simmer for 1 1/2 hours. Season with salt. Serve.
