金不換韓式辣醬炒蜆

材料:

活蜆 1斤

金不換 2棵
紅辣椒 2隻(切碎)
蒜肉 4粒(拍鬆)
韓式辣醬 2湯匙
紹酒 1湯匙

Ingredients:

600 g live clams
2 stalks basil
2 red chillies (finely chopped)
4 cloves garlic (bashed)
2 tbsp Korean chilli sauce
1 tbsp Shaoxing wine

調味料:

魚露 半湯匙

Seasoning:

1/2 tbsp fish sauce

做法:

1. 金不換摘葉,洗淨後備用。
2. 活蜆放在水中,擦洗多次,瀝乾水分。
3. 煮滾半鑊水,放入蜆灼至半開殼,盛起,瀝去水分。
4. 燒熱鑊下油3湯匙,下蒜肉炒香,加入蜆,灒酒炒勻,加入韓式辣椒醬、調味料、紅辣椒及熱水2湯匙炒勻,加蓋焗3分鐘,下金不換葉炒勻即成。

Method :

1. Pick off the leaves of the basil and rinse. Set aside.
2. Put the live clams in water, rub and wash for many times and drain.

3. Bring half wok of water to the boil. Blanch the clams until half open, dish up and drain.
4. Heat a wok, put in 3 tbsp of oil, stir-fry the garlic until fragrant. Add the clams, sprinkle with the wine and stir-fry evenly. Add the Korean chilli sauce, seasoning, red chillies and

2 tbsp of hot water and then give a good stir-fry. Cover the wok and leave for 3 minutes. Finally add the basil and stir-fry evenly. Serve.
